World’s Best Peach Pie!

This morning I was in a baking mood and we had lots of extra peaches in the fridge just waiting to be used, so I decided to make a peach pie.  With my mom’s coaching I accomplished a delicious looking peach pie.  Yes, I said delicious looking because I haven’t actually tasted it :).  But I know it is the world’s best pie ;).  Anyway, I decided to post step by step instructions on how to make it.  Enjoy!

First, you need to peel 6-8 peaches.

Then slice them into a big bowl.

Next, add the following ingredients to the bowl: 1/2 teaspoon cinnamon, 1 tablespoon lemon juice, 3/4 cup sugar, and 1/3 cup flour.  Stir together until it looks like this:

Now, set aside the peaches- it’s time for the crust.  In another bowl, put: 2 cups flour, 1 teaspoon salt, and 2/3 cup + 2 tablespoons shortening.  Cut together with a pastry cutter.  Or a fork would probably work if you don’t have one.

Then put 5 tablespoons of ice cold water in the bowl, put each tablespoon of water in a different spot so it is all spread out.  Why I made ice cold bold, is because the colder the water- the flakier the crust.  So make sure you use very cold water :).  Then stir it all together with a fork, it should start to stick and look something like this:

Make sure you add the water after the shortening and flour are mixed together.  Otherwise this is what happens:

Anyway, then you need to get your hands in there and separate the crust into two equal balls.

Take one of them and put it on a big cutting board covered in flour.  Pat it down into a flatter circle.

Then use a rolling pin and roll it out into a thin circle a little bigger than your pie dish.  Pat the sides together as you go.

Now take your rolling pin and place it on the crust pulling the crust onto the rolling pin as you go. (if that made any sense)

Then when it is all rolled up, put it over your pie dish and slowly roll it out into the bottom.

Pour your peach filling into the pie and repeat the same process with the other ball of crust.  Then roll it over top of the peaches.

Then roll under the extra crust hanging over and pinch the edges together by pushing your thumb into your other hand’s thumb and first finger.

 

Then cut slits in the top…

And put your beautiful pie in the oven at 400 F for ten minutes.  After that, turn the oven down to 350 for 45 more minutes.  Then take it out, let it cool, and enjoy the best pie in the world! :)
